These simple vanilla butter cookies are quick, sweet, and an easy way to make a “fancy” treat. The cookies are so simple that this will be the shortest post I think I’ve ever written. I think of these cookies as a shortbread, but they do have a hint of leavening. I guess that makes them a bit like a sugar cookie, but they are crisp and not overly sweet.
To make these cookies “fancy” for a special occasion, I dip them in melted chocolate and add some sprinkles that fit the occasion. The pictured cookies were baked up as a New Year’s treat. The cookies are delicious without chocolate as well, but I like the contrast.
Here’s what you need:
I didn’t even bother taking a picture since you should have everything you need on hand. Butter, sugar, vanilla, flour, baking powder, and kosher salt. Cookie cutters can be used to create fun shapes, or use a biscuit cutter to make rounds. Melted chocolate for dipping, and sprinkles make for fun additions as well.

Ingredients
1 cup softened butter
1/2 cup powdered sugar
1/2 teaspoon vanilla
2 cups flour
1/4 teaspoon baking powder
1/2 teaspoon kosher salt
Instructions
Preheat oven to 350
Cream butter with powdered sugar until well incorporated. Stir in vanilla. Add the dry ingredients of flour, baking powder, and kosher salt and mix until combined. Roll the dough out between two sheets of wax paper and use a cookie or biscuit cutter to create shapes. Bake the cookies at 350 for about 8 minutes. Do not over bake; you want to see just a hint of golden color at the bottom edges. Allow cookies to cool on cookie sheet for 5-7 minutes before moving to a cooling rack to cool completely.
Optional: melt some chocolate of choice and dip cookies. Add any sprinkles for fun!
Notes
Do not over bake. These cookies should have just the slightest hint of color at the bottom edges when baked.
