OMG this pie!
I created this Chocolate Mint Cream Pie and the minute I took a bite I knew I needed to share it with some people in my family. Oreo crust, mint ganache, chocolate cream, and a giant tower of whipped cream! After taking a few pictures, I drove the pie up to share it with my parents and my brothers’ families. My brother, Jason, messaged me later with, “I honestly didn’t think I would like mint chocolate pie, but OMG that pie was amazing!” Now, most of you don’t know my brother, but he’s not usually an “OMG” kind of guy. This speaks to the awesomeness of Chocolate Mint Cream Pie.
This pie is pretty straightforward, simple ingredients, and no bake if you like it that way. Chocolate Mint Cream Pie is great at any time of year, for most any occasion. I have enjoyed it as a refreshing no bake dessert in the summer or springtime, and that mint works around winter holidays as well.
To Be Honest…
Speaking of this Chocolate Mint Cream Pie being good any time of year, I must confess that I first made this months (and months) ago. I had every intention of getting the recipe up right away, but life gets in the way sometimes. I’m kind of embarrassed by how long it has been since I posted a recipe. Frankly, I have a number of tasty recipes I want to share with you. So, I’m going to keep this post really short before I encounter any more distractions, and I will get right to the point.
Here’s What You Will Need:
Chocolate Mint Cream Pie starts with an Oreo cookie crust made with some crushed Oreos and a bit of melted butter. The next layer is a mint ganache that comes together with chocolate chips, cream, and some mint extract. This is followed by the chocolate cream filling which uses milk, egg yolks, sugar, cornstarch, kosher salt, a bit of butter, and 6oz of chocolate. You will want to top this with a mountain of sweet whipped cream and some shaved chocolate or shaved Andes Mints.

Ingredients
For the Crust
24 Oreos
1/4 cup melted butter
For the Ganache
1/2 cup cream
3/4 cup chocolate chips
1/2 tsp mint extract
For the Chocolate Cream
3 1/2 cups milk*
5 egg yolks
3/4 cup sugar
1/2 cup cornstarch
1/2 tsp kosher salt
2 Tablespoons butter
6oz chocolate*
For the Top
2 cups heavy whipping cream
1/4 cup sugar
optional shaved chocolate or mint chocolate for garnish
Instructions
For the Crust: Using a food processor* crush 24 Oreo until fine crumbs. Add melted butter and process to combine. Press the cookie crumbs into a 9″ pie pan. Bake the crust at 350 for 6-8 minutes to set.
For the ganache: In a medium bowl heat the 1/2 cup cream in the microwave for about 45 seconds. Microwaves vary, but you want the cream to be hot and just a bit steamy. Add the chocolate chips, stir, and let sit for a minute to melt fully. Add the mint extract and stir to combine. Once smooth, pour the ganache over the cookie crust and place the pie in the refrigerator to cool and set while you prepare the next layer.
For the chocolate cream: Place the milk, yolks, sugar, cornstarch and salt in a medium pan and whisk until well combined and lump free. Heat this mixture over medium high heat whisking constantly until it begins to thicken- just before it reaches a boil. Remove from heat and add 2 Tablespoons of butter and 6oz chocolate. Stir as the chocolate melts. Once the chocolate and butter are melted and well incorporated pour the chocolate cream over the ganache layer of the pie. Cover and return to the refrigerator to cool. Allow the pie to cool for at least 2-4 hours before topping with whipped cream.
Notes
* I use whole milk for this recipe, but a lower fat content would work as well.
*For the chocolate cream use a chocolate of your choice. I use a good quality Ghirardelli chocolate chopped before adding it to the thickened cream mixture, but I know some people in my family like the milk chocolate of a Hershey’s bar and I have used that as well.
* I prefer to bake the Oreo crust to set it, but if you want a truly no-bake dessert you can press the cookies mixture into a pie plate and freeze it for 15 minutes instead.
*A food processor is the easiest way to make those cookie crumbs (short of buying premade crust), but go old school and place cookies in a large ziploc bag and crush them with a rolling pin if that is what is available to you.
*For a holiday pie, try using crushed candy canes instead of chocolate shavings as garnish.
